This book focuses on advances in chemistry research. Finally, Chapter 6 examines the impact of controlled hydrolysis of whey protein concentrate (WPC) by three types of enzymes: digestive-trypsin, fungal-proteinase k, and bacterial-thermolysin on technological properties.
